Buffalo Chicken Fries
Ingredients
- 2 lbs chicken thighs
- 1 tsp paprika
- 1 tsp chili
- 1 tsp garlic
- 1/2 tsp oregano
- 1/2 tsp pepper
- Salt to taste
- 1/4 cup buffalo sauce
- 2-3 large russet potatoes
- Spray of oil
- 1 cup yogurt, low fat optional
- 1/2 cup light mayo
- 1/2 cup sour cream, light optional
- 1/4 cup buffalo sauce
- 1 tsp garlic powder
- 1 tsp dried parsley
Instructions
- Season chicken thighs with garlic, chili, paprika, oregano, salt, and pepper.
- Toss the seasoned chicken into the oven at 375°F.
- Shave down russet potatoes and cut them into fry shape or cubes.
- Spray the potatoes with a light kiss of oil and toss.
- Introduce the same spices used for the chicken to the potatoes and toss to distribute.
- Place the potatoes in a hot air fryer basket set at 375°F.
- Cook the potatoes for about 20 minutes, flipping midway through.
- For the buffalo ranch, mix 2 parts low-fat yogurt, 1 part light mayo, and 1 part low-fat sour cream.
- Add a splash of buffalo sauce, garlic powder, and dried parsley to the ranch mixture.
- Adjust the thickness of the ranch with a little bit of water.
- Once the chicken is done, slice it into cubes and drizzle with buffalo sauce.
- Plate the chicken and top with low-moisture mozzarella if desired.
