Honey BBQ Tenders
Ingredients
- 2 lbs chicken tenders
- ¼ cup flour
- salt to taste
- 1 tsp black pepper
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp cayenne pepper
- 3 cups flour
- 1.5 cup cornstarch
- 1 tsp baking powder
- ½ tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp cayenne pepper
- 12 oz sparkling water or club soda
- ½ cup ketchup
- brown sugar
- apple cider vinegar
- Worcestershire sauce
- hot sauce
- honey
- cold butter
Instructions
- Season the chicken tenders with flour, salt, black pepper, garlic powder, onion powder, chili powder, paprika, and cayenne pepper.
- Mix the seasonings and allow the tenders to dry out.
- In a bowl, combine flour, cornstarch, baking powder, kosher salt, black pepper, garlic powder, onion powder, chili powder, paprika, and cayenne pepper.
- Transfer one third of the mixture into another bowl and add sparkling water or club soda until it resembles a thin pancake batter.
- Coat the chicken tenders in the dry mixture, then dip into the wet batter, and back into the dry mixture.
- Prepare the honey BBQ sauce by mixing ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, hot sauce, honey, and cold butter.
- Heat oil to 350°F and fry the tenders for 5-6 minutes.
- Allow the tenders to rest, then fry again for 1 minute until golden.
