Ingredients

  • 2 lbs chicken tenders
  • ¼ cup flour
  • salt to taste
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • 3 cups flour
  • 1.5 cup cornstarch
  • 1 tsp baking powder
  • ½ tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • 12 oz sparkling water or club soda
  • ½ cup ketchup
  • brown sugar
  • apple cider vinegar
  • Worcestershire sauce
  • hot sauce
  • honey
  • cold butter

Instructions

  1. Season the chicken tenders with flour, salt, black pepper, garlic powder, onion powder, chili powder, paprika, and cayenne pepper.
  2. Mix the seasonings and allow the tenders to dry out.
  3. In a bowl, combine flour, cornstarch, baking powder, kosher salt, black pepper, garlic powder, onion powder, chili powder, paprika, and cayenne pepper.
  4. Transfer one third of the mixture into another bowl and add sparkling water or club soda until it resembles a thin pancake batter.
  5. Coat the chicken tenders in the dry mixture, then dip into the wet batter, and back into the dry mixture.
  6. Prepare the honey BBQ sauce by mixing ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, hot sauce, honey, and cold butter.
  7. Heat oil to 350°F and fry the tenders for 5-6 minutes.
  8. Allow the tenders to rest, then fry again for 1 minute until golden.
