Ingredients

  • 2 lbs chicken tenders
  • 2 cups buttermilk
  • 2 tbsp mustard
  • 1/4 cup hot sauce
  • 2 tbsp pickle juice, optional
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1 tsp paprika
  • 1 tsp chili
  • 1 tsp garlic
  • 1 tsp pepper
  • 1 tsp salt
  • 3 cups flour, dry batter
  • 1 cup corn starch, dry batter
  • 1 tsp baking powder, dry batter
  • 1 tsp paprika, dry batter
  • 1 tsp chili, dry batter
  • 1 tsp garlic, dry batter
  • 1 tsp pepper, dry batter
  • 1 tsp salt, dry batter
  • 1 cup hot sauce, sauce
  • 1 tsp lemon pepper, sauce
  • 1 lemon, juiced & zested, sauce
  • 1/2 cup hot honey, sauce
  • 1 cup mayo, dipping sauce
  • 1/4 cup chipotle hot sauce, dipping sauce

Instructions

  1. In a bowl, combine buttermilk, mustard, hot sauce, pickle juice, flour, baking powder, garlic, chili, salt, and pepper; whisk until thick.
  2. Add chicken tenders to the marinade and let them marinate.
  3. Prepare the spicy lemon pepper sauce by combining hot sauce, lemon pepper, lemon zest, and lemon juice in a pan over low heat.
  4. Add hot honey to the sauce and mix well.
  5. For the dry batter, mix flour, corn starch, baking powder, garlic, chili, paprika, salt, and pepper in a bowl.
  6. Coat the marinated chicken tenders in the dry batter.
  7. Heat oil to 350°F and fry the chicken tenders for 5-6 minutes until golden brown.
  8. Serve with the spicy lemon pepper sauce and enjoy.
