Spicy Lemon Pepper Tenders
Ingredients
- 2 lbs chicken tenders
- 2 cups buttermilk
- 2 tbsp mustard
- 1/4 cup hot sauce
- 2 tbsp pickle juice, optional
- 1 cup flour
- 1/2 tsp baking powder
- 1 tsp paprika
- 1 tsp chili
- 1 tsp garlic
- 1 tsp pepper
- 1 tsp salt
- 3 cups flour, dry batter
- 1 cup corn starch, dry batter
- 1 tsp baking powder, dry batter
- 1 tsp paprika, dry batter
- 1 tsp chili, dry batter
- 1 tsp garlic, dry batter
- 1 tsp pepper, dry batter
- 1 tsp salt, dry batter
- 1 cup hot sauce, sauce
- 1 tsp lemon pepper, sauce
- 1 lemon, juiced & zested, sauce
- 1/2 cup hot honey, sauce
- 1 cup mayo, dipping sauce
- 1/4 cup chipotle hot sauce, dipping sauce
Instructions
- In a bowl, combine buttermilk, mustard, hot sauce, pickle juice, flour, baking powder, garlic, chili, salt, and pepper; whisk until thick.
- Add chicken tenders to the marinade and let them marinate.
- Prepare the spicy lemon pepper sauce by combining hot sauce, lemon pepper, lemon zest, and lemon juice in a pan over low heat.
- Add hot honey to the sauce and mix well.
- For the dry batter, mix flour, corn starch, baking powder, garlic, chili, paprika, salt, and pepper in a bowl.
- Coat the marinated chicken tenders in the dry batter.
- Heat oil to 350°F and fry the chicken tenders for 5-6 minutes until golden brown.
- Serve with the spicy lemon pepper sauce and enjoy.
