Ingredients

  • 2 pounds ground beef
  • 1/2 onion, grated
  • 1/4 cup yogurt
  • 1 tsp garlic
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp black pepper
  • Salt to taste
  • 4 roma tomatoes, quartered
  • Jalapeños
  • 1/2 cup tahini (toasted sesame seed paste)
  • 1 lemon, juiced
  • 1 garlic clove, grated
  • 1/4 cup yogurt
  • Water, to thin out
  • Salt to taste
  • 1/4 cup oil
  • 1/4 cup tomato paste
  • 2 tbsp ketchup
  • 1 tsp cayenne pepper
  • 1/4 cup water
  • Salt to taste
  • 4 large pita

Instructions

  1. Grate an onion and add it to ground beef.
  2. Add a healthy spoonful of yogurt and season with garlic, paprika, chili powder, salt, and black pepper.
  3. Mix the ingredients thoroughly with your hands.
  4. Ball up the mixture and place it in the center of parchment paper, then cover with another piece of parchment.
  5. Spread the mixture into a thin layer and roll it into a large cigar shape.
  6. Place on a sheet tray with tomatoes and jalapeños.
  7. Bake in the oven at 400°F for about 15 minutes.
  8. Remove from the oven and broil on high for a couple of minutes.
  9. Serve in pita with meat, tomatoes, jalapeños, tahini sauce, and pomegranate molasses.
