Chipotle Beef Loaded Fries
Ingredients
- 5 lbs beef chuck, cubed
- 1 red onion, chopped
- 10 cloves garlic, minced
- 15 oz fire roasted tomatoes
- 1 can chipotle sauce
- 3 ancho chilis, soaked
- 3 New Mexico chilis, soaked
- 2 guajillo chilis, soaked
- 1/2 cup chili water
- 1/4 cup white vinegar
- 2 tsp cumin
- 1 tbsp chili powder
- 1 tbsp smoked paprika
- 1 tbsp oregano
- 2 tbsp salt
- 30 oz canned corn
- 1/4 cup mayo
- 1/4 cup sour cream
- cotija cheese, crumbled
- 1 tsp paprika powder
- juice of 1 lime
- salt to taste
Instructions
- Cube the beef chuck.
- In a very hot pan, sear the beef until crusty.
- In a blender, combine soaked ancho, guajillo, and New Mexico chilis with a splash of chili water, chipotle sauce, and fire-roasted tomatoes.
- Add a splash of white vinegar to the blender mixture.
- Season the mixture with cumin, oregano, paprika, salt, and pepper.
- In a slow cooker, pressure cooker, or regular pot, add the beef and salt it directly.
- Pour the chipotle mixture over the beef.
- Cook on low for about five hours until the beef falls apart.
- In a bowl, mix corn, mayo, sour cream, cotija cheese, paprika, salt, and lime juice.
- Layer fries, cheese, chipotle beef, and street corn in a serving dish.
