Creamy Extra-Cheesy Mac and Cheese

Ingredients
- 4 quarts of water
- Some salt
- 1 lb. Cavatappi pasta
- 1/2 lb. sharp cheddar cheese
- 1 lb. mozzarella cheese
- 1 lb. colby jack cheese
- 3 tablespoons of butter
- 3 tablespoons of all-purpose flour
- 1 can of evaporated milk
- 2 cups of heavy cream
- 2 teaspoons of Dijon mustard
- Parsley flakes
Instructions
- In a pot set to high heat, bring 4 quarts of water to a boil and add some salt.
- Add 1 lb. of Cavatappi pasta and cook for about 11 to 12 minutes.
- Drain the pasta and set it aside.
- Grate 1 lb. of sharp cheddar cheese, 1 lb. of mozzarella cheese, and 1 lb. of colby jack cheese.
- In a pan set to low-medium heat, melt 3 tablespoons of butter.
- Add half of the seasoning mix and mix it in.
- Add 3 tablespoons of all-purpose flour in two parts, mixing to ensure there are no lumps.
- Slowly add 1 can of evaporated milk and mix.
- Next, add 2 cups of heavy cream and the rest of the seasoning mix.
- Add 2 teaspoons of Dijon mustard and mix until well combined.
- Add half of each cheese in two parts, mixing until the cheese melts.
- Fold in the pasta until well combined.
- Add some of the pasta to a baking dish and layer with cheese.
- Add the rest of the pasta and another layer of cheese.
- Bake in the oven for 15 to 20 minutes at 350 degrees.
- Broil for 2 to 3 minutes to get a crispy coat.
- Garnish with parsley flakes and serve.
