Creamy Extra-Cheesy Mac and Cheese

Ingredients

  • 4 quarts of water
  • Some salt
  • 1 lb. Cavatappi pasta
  • 1/2 lb. sharp cheddar cheese
  • 1 lb. mozzarella cheese
  • 1 lb. colby jack cheese
  • 3 tablespoons of butter
  • 3 tablespoons of all-purpose flour
  • 1 can of evaporated milk
  • 2 cups of heavy cream
  • 2 teaspoons of Dijon mustard
  • Parsley flakes

Instructions

  1. In a pot set to high heat, bring 4 quarts of water to a boil and add some salt.
  2. Add 1 lb. of Cavatappi pasta and cook for about 11 to 12 minutes.
  3. Drain the pasta and set it aside.
  4. Grate 1 lb. of sharp cheddar cheese, 1 lb. of mozzarella cheese, and 1 lb. of colby jack cheese.
  5. In a pan set to low-medium heat, melt 3 tablespoons of butter.
  6. Add half of the seasoning mix and mix it in.
  7. Add 3 tablespoons of all-purpose flour in two parts, mixing to ensure there are no lumps.
  8. Slowly add 1 can of evaporated milk and mix.
  9. Next, add 2 cups of heavy cream and the rest of the seasoning mix.
  10. Add 2 teaspoons of Dijon mustard and mix until well combined.
  11. Add half of each cheese in two parts, mixing until the cheese melts.
  12. Fold in the pasta until well combined.
  13. Add some of the pasta to a baking dish and layer with cheese.
  14. Add the rest of the pasta and another layer of cheese.
  15. Bake in the oven for 15 to 20 minutes at 350 degrees.
  16. Broil for 2 to 3 minutes to get a crispy coat.
  17. Garnish with parsley flakes and serve.
