Roasted Ham with Salsa Macha

Ingredients
- 3 cups avocado oil
- 8 chiles ancho
- 4 chiles de arbol
- 1/2 white onion
- 6 sliced garlic cloves
- 1/2 cup peanuts
- 1 1/2 cups honey
- salt
- sesame seeds
Instructions
- In a skillet set to high heat, add 3 cups of avocado oil.
- Once hot, fry 8 chiles ancho, one by one, for about 10 seconds each.
- Fry 4 chiles de arbol for about 10 seconds.
- Fry half a white onion for about 2 minutes or until golden.
- Add 6 sliced garlic cloves and fry for about 2 minutes.
- Add half a cup of peanuts and fry for about 3 minutes.
- Take everything out and add to a blender, including the oil once it cools down.
- Use the pulse method to blend until desired consistency.
- Add 1 1/2 cups of honey and some salt, mixing until well incorporated.
- Apply about half of the salsa macha to the ham, getting it in between the slices.
- Sprinkle sesame seeds on top, cover with foil, and bake at 275 degrees for 10 minutes per pound.
- For an 8 pound ham, bake for an hour and 20 minutes.
- Baste the ham and add more salsa macha.
- Increase the heat to 425 degrees and cook uncovered for about 20 minutes.
