Roasted Ham with Salsa Macha

Ingredients

  • 3 cups avocado oil
  • 8 chiles ancho
  • 4 chiles de arbol
  • 1/2 white onion
  • 6 sliced garlic cloves
  • 1/2 cup peanuts
  • 1 1/2 cups honey
  • salt
  • sesame seeds

Instructions

  1. In a skillet set to high heat, add 3 cups of avocado oil.
  2. Once hot, fry 8 chiles ancho, one by one, for about 10 seconds each.
  3. Fry 4 chiles de arbol for about 10 seconds.
  4. Fry half a white onion for about 2 minutes or until golden.
  5. Add 6 sliced garlic cloves and fry for about 2 minutes.
  6. Add half a cup of peanuts and fry for about 3 minutes.
  7. Take everything out and add to a blender, including the oil once it cools down.
  8. Use the pulse method to blend until desired consistency.
  9. Add 1 1/2 cups of honey and some salt, mixing until well incorporated.
  10. Apply about half of the salsa macha to the ham, getting it in between the slices.
  11. Sprinkle sesame seeds on top, cover with foil, and bake at 275 degrees for 10 minutes per pound.
  12. For an 8 pound ham, bake for an hour and 20 minutes.
  13. Baste the ham and add more salsa macha.
  14. Increase the heat to 425 degrees and cook uncovered for about 20 minutes.
