Biscoff-Stuffed Cookies

Ingredients

• ½ cup (1 stick / 113 g) unsalted butter, browned
• 1/4 cup (60g) cookie butter
• ½ cup (100 g) light brown sugar
• 1/4 cup (50 g) granulated sugar
• 1 large egg
• 1 tsp vanilla extract
• 1 1/4 cups (150g) all-purpose flour
• ½ tsp baking soda
• ½ tsp baking powder
• ¼ tsp salt
• 45g crushed Biscoff cookies
• 1 cup (120 g) chocolate chips
• 8 tsp Biscoff cookie butter (for stuffing)

Instructions

1. Freeze the filling.
2. Scoop 8 teaspoons of Biscoff spread onto a parchment-lined tray.
