Honey Bbq Chicken Sliders
Ingredients
- 2 lbs boneless chicken thighs
- 1 cup flour (wet batter)
- 1/3 cup corn starch (wet batter)
- 1/4 cup egg whites (wet batter)
- 8-12 oz sparkling water (wet batter)
- 3 cups flour (dry batter)
- 1 cup corn starch (dry batter)
- 1 tsp baking powder (dry batter)
- 1 tsp Chili (dry batter)
- 1 tsp Garlic powder (dry batter)
- 1 tsp Paprika (dry batter)
- 1/2 tsp Pepper (dry batter)
- Salt (to taste)
- 1 cup ketchup (sauce)
- 1/4 cup Worcestershire sauce (sauce)
- 2 tbsp apple cider vinegar (sauce)
- 2 tbsp chipotle hot sauce (sauce)
- 1/4 cup honey (sauce)
- 3 tbsp butter (sauce)
Instructions
- Salt brine the chicken thighs overnight.
- Prepare the wet batter by mixing flour, corn starch, egg whites, and sparkling water until it reaches a heavy cream consistency.
- Prepare the dry batter by combining flour, corn starch, baking powder, chili, garlic powder, paprika, and pepper.
- Heat oil to 350°F for frying.
- Dip the brined chicken thighs into the wet batter, then into the dry batter for a craggly texture.
- Fry the chicken thighs for 5-7 minutes until golden brown.
- Prepare the sauce by mixing ketchup, Worcestershire sauce, apple cider vinegar, chipotle hot sauce, honey, and butter in a pan until glossy.
- Assemble the sliders with the fried chicken, sauce, spicy mayo, and pickles on slider buns.
