Garlic Butter Steak Loaded Potatoes
Ingredients
- 4 large russet potatoes
- 2 lbs steak of choice (ribeye)
- 1 tsp chili
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp pepper
- Salt to taste
- 2 tbsp butter
- 2-4 cloves garlic, minced
- Half bundle cilantro, finely chopped
- 6 oz jalapeno pepper jack
- 2 tbsp butter
- 1/4 cup sour cream
- 2 garlic cloves, grated
- 1/2 bundle cilantro, finely chopped
- 1 tsp chili
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp pepper
- Salt to taste
- Store bought queso (optional)
Instructions
- Poke holes in the potatoes with a fork, coat with oil and sprinkle with salt, then wrap in foil.
- Bake the potatoes in the oven at 400°F for about an hour.
- Cube the steak and season with chili, garlic, paprika, salt, and pepper.
- Melt a piece of steak fat in a pan over high heat, then add the cubed steak and cook for 2 minutes.
- Add butter to the pan and then add minced garlic and cilantro, mixing well.
- Once the potatoes are done, slice the tops off and scoop out the insides into a bowl.
- Mix the potato insides with jalapeno pepper jack, butter, sour cream, grated garlic, cilantro, and the same spices used for the steak.
- Fill the potato shells with the mixture, top with the cooked steak and garlic butter.
- Optionally, finish with store bought queso.
