Jollibee Style Fried Chicken
Ingredients
- 4 lbs dark meat chicken
- 6 cups dry batter total
- 2 cups starch
- 2 tsp paprika
- 2 tsp chili powder
- 2 tsp garlic powder
- 1 tsp black pepper
- Salt to taste (roughly 2 tsp)
- 1 egg
- 1/4 cup hot sauce
- 1 cup dry batter for wet mix
- 1/2 cup - 1 cup sparkling water (adjust accordingly)
- Flaky salt for finishing
- 1 tsp cayenne
- 1 tsp five spice
- 4 tbsp butter for gravy
- 4 tbsp flour for gravy
- 2 cups chicken stock for gravy
- 2 tbsp soy sauce for gravy
Instructions
- Cover chicken in salt and brine overnight.
- Prepare dry batter by mixing 6 cups total, including 2 cups starch and spices.
- In a separate bowl, whisk together 1 egg, 1/4 cup hot sauce, and 1 cup of dry batter.
- Add 1/2 cup to 1 cup of sparkling water to the wet batter, adjusting for consistency.
- Melt 4 tbsp butter in a pan, then add 4 tbsp flour and whisk until golden brown.
- Add 2 tbsp soy sauce and 2 cups chicken stock to the gravy mixture, whisking until thickened.
- Dust the brined chicken in the dry batter, then dip into the wet batter, allowing excess to drip off.
- Return the chicken to the dry batter for a second coating.
- Fry the chicken in hot oil at 350°F for 10 to 12 minutes until golden brown.
- Sprinkle with flaky salt, cayenne, and five spice before serving with gravy.
