7 Spice Cheese Steak

Ingredients

  • 2 pounds Steak - ribeye, strip, or sirloin
  • 2 large 10 in hoagie rolls (or 4 smaller ones)
  • Tallow or oil to cook
  • 1 medium onion
  • 1 large bell pepper
  • 1 jalapeño
  • 1/2 tsp cumin
  • 1 tsp coriander
  • 1 tsp all spice
  • 1 tsp cardamom
  • 1 tsp chipotle chili powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • Salt to taste
  • 1/4 cup banana peppers (optional)
  • 1/4 cup sweet cherry peppers
  • 8-12 oz sharp cheddar

Instructions

  1. Melt down some beef tallow on one side of a flat tile.
  2. Cook onions and green peppers on medium heat.
  3. Add spices (cumin, coriander, allspice, cardamom, chipotle chili powder, smoked paprika, garlic) to the onions and peppers.
  4. Add jalapeno for extra spice and a pinch of salt, then continue to soften.
  5. Once the vegetables begin to blister, slide them over.
  6. Melt more tallow and add the steak, spreading it out to achieve a Maillard reaction.
  7. Once the steak has color, chop it up and lower the heat.
  8. Add the seven spice rub and proper amount of salt to the steak.
  9. Mix in the cooked onions, peppers, jalapenos, banana peppers, and sweet peppers.
  10. Let the cheese melt with a little steam.
  11. Slice the hoagie roll and let it steam with the meat.
  12. Use parchment to help slide the sandwich together.
