7 Spice Cheese Steak
Ingredients
- 2 pounds Steak - ribeye, strip, or sirloin
- 2 large 10 in hoagie rolls (or 4 smaller ones)
- Tallow or oil to cook
- 1 medium onion
- 1 large bell pepper
- 1 jalapeño
- 1/2 tsp cumin
- 1 tsp coriander
- 1 tsp all spice
- 1 tsp cardamom
- 1 tsp chipotle chili powder
- 1 tsp garlic powder
- 2 tsp paprika
- Salt to taste
- 1/4 cup banana peppers (optional)
- 1/4 cup sweet cherry peppers
- 8-12 oz sharp cheddar
Instructions
- Melt down some beef tallow on one side of a flat tile.
- Cook onions and green peppers on medium heat.
- Add spices (cumin, coriander, allspice, cardamom, chipotle chili powder, smoked paprika, garlic) to the onions and peppers.
- Add jalapeno for extra spice and a pinch of salt, then continue to soften.
- Once the vegetables begin to blister, slide them over.
- Melt more tallow and add the steak, spreading it out to achieve a Maillard reaction.
- Once the steak has color, chop it up and lower the heat.
- Add the seven spice rub and proper amount of salt to the steak.
- Mix in the cooked onions, peppers, jalapenos, banana peppers, and sweet peppers.
- Let the cheese melt with a little steam.
- Slice the hoagie roll and let it steam with the meat.
- Use parchment to help slide the sandwich together.
