Chipotle Beef Tostadas
Ingredients
- 5 lbs beef chuck
- 1 red onion
- 10 cloves garlic
- 15 oz fire roasted tomatoes
- 1 can chipotle sauce (8 oz)
- 3 ancho chilis
- 3 New Mexico chilis
- 1/2 cup chili water
- 1/4 cup white vinegar
- 2 tsp cumin
- 1 tbsp chili powder
- 1 tbsp smoked paprika
- 1 tbsp oregano
- 2 tbsp salt
- 30 oz canned corn
- 1/3 cup mayo
- 1/4 cup cotija cheese
- 1 tsp chili powder
- Juice of 1 lime
- Salt to taste
- 1 cup Mexican crema
- 1/4 cup chipotle hot sauce
- 1 tbsp honey (optional)
Instructions
- Slice beef chuck into large cubes.
- Sear the beef in a hot oil pan until deep brown, then remove.
- Char down the onion in the same pan.
- In a blender, combine fire roasted tomatoes, chipotle sauce, ancho chilis, New Mexico chilis, charred onion, oregano, paprika, chili powder, salt, and pepper.
- In a slow cooker, pressure cooker, or crock pot, add the beef and smother it with the blended mixture.
- Cover and cook low and slow until the meat shreds easily.
- For corn esquites, mix canned corn with mayo, chili powder, cotija cheese, lime juice, and salt.
- Fry corn tortillas in hot oil or use pre-made tostada shells.
- Assemble tostadas with avocado, chipotle beef, corn esquites, pico, and chipotle sour cream.
