Chipotle Beef Tostadas

Ingredients

  • 5 lbs beef chuck
  • 1 red onion
  • 10 cloves garlic
  • 15 oz fire roasted tomatoes
  • 1 can chipotle sauce (8 oz)
  • 3 ancho chilis
  • 3 New Mexico chilis
  • 1/2 cup chili water
  • 1/4 cup white vinegar
  • 2 tsp cumin
  • 1 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tbsp oregano
  • 2 tbsp salt
  • 30 oz canned corn
  • 1/3 cup mayo
  • 1/4 cup cotija cheese
  • 1 tsp chili powder
  • Juice of 1 lime
  • Salt to taste
  • 1 cup Mexican crema
  • 1/4 cup chipotle hot sauce
  • 1 tbsp honey (optional)

Instructions

  1. Slice beef chuck into large cubes.
  2. Sear the beef in a hot oil pan until deep brown, then remove.
  3. Char down the onion in the same pan.
  4. In a blender, combine fire roasted tomatoes, chipotle sauce, ancho chilis, New Mexico chilis, charred onion, oregano, paprika, chili powder, salt, and pepper.
  5. In a slow cooker, pressure cooker, or crock pot, add the beef and smother it with the blended mixture.
  6. Cover and cook low and slow until the meat shreds easily.
  7. For corn esquites, mix canned corn with mayo, chili powder, cotija cheese, lime juice, and salt.
  8. Fry corn tortillas in hot oil or use pre-made tostada shells.
  9. Assemble tostadas with avocado, chipotle beef, corn esquites, pico, and chipotle sour cream.
