Taquitos de Papa en Salsa Verde

Ingredients

  • 5 potatoes
  • Salt to taste
  • Some oil
  • 1/2 white onion
  • 3 minced garlic cloves
  • 3 roma tomatoes
  • Corn tortillas
  • Lettuce
  • Crema Mexicana
  • Queso fresco
  • 9 tomatillos
  • 2 serrano peppers
  • Small piece white onion
  • 2 garlic cloves
  • 1 avocado
  • Small bunch of cilantro

Instructions

  1. Boil the potatoes in medium heat with water and salt until tender, about 15 minutes.
  2. Remove the potatoes and set aside.
  3. In a saucepan, boil tomatillos, serrano peppers, white onion, and garlic cloves until tomatillos change color, about 5 minutes.
  4. Transfer the boiled ingredients to a blender, add avocado, cilantro, salt, and half a cup of water, then blend until desired consistency.
  5. Mash the boiled potatoes.
  6. In a pan, heat some oil and sauté half a white onion and three minced garlic cloves for about a minute.
  7. Add three Roma tomatoes and cook until they release their juice, about 3 minutes.
  8. Mix in the mashed potatoes and add salt to taste, cooking for an additional 3 minutes.
  9. Microwave corn tortillas for about a minute to soften them.
  10. Add filling to each tortilla and roll to form taquitos.
  11. Fry the taquitos in hot oil for about 3 minutes on each side.
  12. Serve topped with salsa, lettuce, crema mexicana, and queso fresco.
