Taquitos de Papa en Salsa Verde

Ingredients
- 5 potatoes
- Salt to taste
- Some oil
- 1/2 white onion
- 3 minced garlic cloves
- 3 roma tomatoes
- Corn tortillas
- Lettuce
- Crema Mexicana
- Queso fresco
- 9 tomatillos
- 2 serrano peppers
- Small piece white onion
- 2 garlic cloves
- 1 avocado
- Small bunch of cilantro
Instructions
- Boil the potatoes in medium heat with water and salt until tender, about 15 minutes.
- Remove the potatoes and set aside.
- In a saucepan, boil tomatillos, serrano peppers, white onion, and garlic cloves until tomatillos change color, about 5 minutes.
- Transfer the boiled ingredients to a blender, add avocado, cilantro, salt, and half a cup of water, then blend until desired consistency.
- Mash the boiled potatoes.
- In a pan, heat some oil and sauté half a white onion and three minced garlic cloves for about a minute.
- Add three Roma tomatoes and cook until they release their juice, about 3 minutes.
- Mix in the mashed potatoes and add salt to taste, cooking for an additional 3 minutes.
- Microwave corn tortillas for about a minute to soften them.
- Add filling to each tortilla and roll to form taquitos.
- Fry the taquitos in hot oil for about 3 minutes on each side.
- Serve topped with salsa, lettuce, crema mexicana, and queso fresco.
