Steak Queso Tostadas
Ingredients
- 8-12 corn tortillas, fried
- 2 lbs steak
- 1 tbsp oil
- 2 tbsp Worcestershire sauce
- 2 tsp paprika
- 2 tsp chili powder
- 1 tsp cayenne
- 1 tsp oregano
- 1 tsp black pepper
- Salt to taste
- 2 tbsp butter
- 2 tbsp flour
- 1 - 1.5 cup full fat milk
- 1/4 - 1/2 cup mozzarella cheese
- Small can green chilis (4.5oz)
- Salt and pepper to taste
- 3 large ripe avocados
- 1 lime, juiced
- Salt to taste
- Tomatoes
- Onions
- Cilantro
Instructions
- Slice the steak into bite-sized pieces.
- Add a light drop of oil and Worcestershire sauce to the steak.
- Season the steak with cayenne, oregano, chili powder, black pepper, salt, and paprika.
- Cover and marinate in the fridge for a couple of hours.
- To make the queso, melt butter in a pan.
- Add an equal amount of flour to the melted butter to create a roux.
- Cook the roux for a couple of minutes until it reaches a dark blonde color.
- Slowly add milk to the roux, mixing until you achieve the perfect consistency.
- Remove from heat and add mozzarella cheese and green chilis to the mixture.
- In a super hot pan, add oil and cook the marinated steak until done.
- Assemble the tostadas by spreading guacamole or refried beans on the fried tortillas.
- Add the cooked steak on top, smother with queso, and finish with tomatoes, onions, and cilantro.
