Steak and Parmesan Pasta

Ingredients

  • 2 ribeye or sirloin
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • Fresh thyme
  • Fresh rosemary
  • 2 garlic cloves smashed
  • 250g rigatoni pasta
  • 4 tbsp butter
  • 56g shallot minced or 1 medium onion chopped
  • 4 big cloves garlic minced
  • 200ml double cream
  • 60g grated Parmesan cheese
  • Salt & black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1 tsp oregano
  • Fresh parsley chopped for garnish

Instructions

  1. Season the ribeye or sirloin with salt and pepper.
  2. Heat olive oil and 2 tbsp of butter in a pan.
  3. Add fresh thyme, rosemary, and smashed garlic cloves to the pan.
  4. Cook the steak to your desired doneness, then remove and let rest.
  5. In a pot, cook the rigatoni pasta according to package instructions.
  6. In the same pan, add 4 tbsp of butter, shallot or onion, and minced garlic.
  7. Sauté until fragrant, then add double cream and bring to a simmer.
  8. Stir in grated Parmesan cheese, salt, black pepper, garlic powder, chili flakes, and oregano.
  9. Combine the cooked pasta with the sauce.
  10. Slice the steak and serve over the pasta, garnished with fresh parsley.
