Ingredients
- 3 roasted poblano peppers
- 2 tbsp butter
- 2 minced garlic cloves
- 1/4 white onion
- 1 1/2 lbs. of shrimp
- 1/8 tsp black pepper
- 1/8 tsp paprika
- 1/8 tsp salt
- 1 can of corn
- 10 oz crema Mexicana
- 2 tsp chicken bouillon
- Monterrey Jack cheese
Instructions
- Remove the seeds from the roasted poblano peppers and cut them into long strips.
- In a pan set to low-medium heat, add 2 tablespoons of butter and let it melt.
- Add 2 minced garlic cloves and 1/4 white onion to the pan and sauté for about a minute.
- Add 1 1/2 lbs. of cleaned and deveined shrimp to the pan.
- Season with 1/8 tsp each of black pepper, paprika, and salt, and mix it in.
- Add 1 can of corn and the poblano strips, then give it a good mix.
- Stir in 10 oz of crema Mexicana and 2 tsp of chicken bouillon.
- Add Monterrey Jack cheese to your liking, cover, and cook for 3 minutes.
- Serve with white rice or pasta.
