Garlic Shrimp (Camarones al Ajillo)

Ingredients
- 2 lbs. shrimp
- Salt and pepper to taste
- Paprika
- 4 tbsp butter
- 12 minced garlic cloves
- 1/2 red onion
- Juice of 1 lime
- 1/2 tbsp parsley flakes
- 1/2 tbsp chili flakes
- Some cilantro
- 3 tbsp butter (for rice)
- 3 minced garlic cloves (for rice)
- 1/4 white onion (for rice)
- 1.5 cups white rice
- 12 oz canned corn
- 3 cups boiling water
- 1 tbsp chicken bouillon
Instructions
- Season shrimp with salt, pepper, and paprika.
- In a pan set to medium heat, add oil and 4 tbsp of butter, stirring until melted.
- Add 12 minced garlic cloves and 1/2 red onion, sauté for about 4 minutes.
- Add the seasoned shrimp to the pan and mix well.
- Add the juice of 1 lime, 1/2 tbsp parsley flakes, and 1/2 tbsp chili flakes, mixing until well incorporated.
- Add some cilantro and let it cook for about 3 minutes.
- For the rice, in a saucepan set to medium heat, add oil and 3 tbsp of butter.
- Once melted, add 3 minced garlic cloves and 1/4 white onion, sauté for about 1 minute.
- Add 1.5 cups of white rice and fry until golden for about 3 minutes.
- Add 12 oz of canned corn and mix.
- Add 3 cups of boiling water and 1 tbsp of chicken bouillon, cover, and reduce heat to low, cooking for 15 minutes.
- After 15 minutes, turn off the heat, cover, and let it rest for 5 minutes.
