Cóctel de Camarón | Shrimp Cocktail

Ingredients

  • 1/4 white onion
  • 4 garlic cloves
  • 1 tbsp shrimp bouillon
  • Some salt
  • 2 lbs. shrimp
  • 2 cups Clamato (tomato juice)
  • 1 cup reserved shrimp water
  • 1/2 cup ketchup
  • Juice of 4 limes
  • 2 tsp Worcestershire sauce
  • Some Jugo Maggi
  • Salt
  • Pepper
  • 1.5 cucumbers
  • 3 roma tomatoes
  • 1/2 red onion
  • 2 jalapeños
  • Cilantro
  • Avocado

Instructions

  1. In a pot set to medium heat with boiling water, add a quarter of a white onion, four garlic cloves, one tablespoon of shrimp bouillon, and some salt.
  2. Mix and then add the shrimp.
  3. Cook for about two to three minutes, being careful not to overcook the shrimp.
  4. Remove from heat and transfer the shrimp straight into a bowl of ice water to stop the cooking process.
  5. Reserve one cup of the cooking water.
  6. In a bowl, combine two cups of Clamato tomato juice, the reserved cup of water, half a cup of ketchup, the juice of four limes, two teaspoons of Worcestershire sauce, some Jugo Maggi, salt, and pepper.
  7. Mix and test for salt.
  8. Prepare by adding one and a half cucumbers, three roma tomatoes (seeds removed), half a red onion, two jalapeños, cilantro, the shrimp, and the salsa made.
  9. Mix everything together and add the avocado last, being gentle to keep its shape.
