Pepper Steak and Celery Stir Fry

Ingredients
- 1 lb sirloin, set in the freezer for 10 minutes until firm
- salt
- pepper
- 1 tbsp cornstarch
- 1 tsp light brown sugar
- 1 lemon
- 2 tbsp neutral oil
- 5 celery, sliced on a bias
- 3 garlic cloves, grated
- 3 scallions
- 2 tbsp soy sauce
- 2 tbsp unsalted butter
Instructions
- Slice the chilled beef against the grain into quarter-inch strips.
- Place it into a bowl with salt, black pepper, cornstarch, and brown sugar.
- Toss until well-coated.
- Remove the peel from a lemon and then slice it in half.
- Into a ripping hot cast iron, add in your beef and don't touch it.
- Once it looks cooked, give it a flip.
- Not overcrowding the pan is key; do it in two batches if needed.
- While your meat rests, add in a bit more oil, celery, garlic, scallion whites, and the lemon peels.
- For the sauce, add soy sauce and butter.
- After a minute, add your meat back in.
- Turn off the heat and add in half the lemon juice from earlier.
