Ingredients
- 2 salmon fillets, skin-on
- salt
- black pepper
- ¼ cup thinly sliced oil-packed sun-dried tomatoes, plus 2 tbsp oil from the jar
- ½ medium yellow onion, diced
- 1 tsp dried oregano
- 1 tsp crushed red pepper
- 2 tbsp tomato paste
- 1 cup clam juice
- ½ cup heavy cream
- Fresh basil leaves, for serving
Instructions
- Pat the salmon dry, season with salt and pepper, and sear it skin-side down in a tablespoon of sun-dried tomato oil over medium-high heat.
- Let the salmon cook 70% of the way through, then let it rest skin side up.
- Add the diced onions and let them cook with a little salt and more sun-dried tomato oil.
- Add oregano, crushed red pepper, and tomato paste.
- Crank up the heat and pour in clam juice, letting it reduce by half.
- Cut the heat and add sun-dried tomatoes and heavy cream, reducing a bit more.
- Bring the salmon back to finish cooking.
