Ingredients

  • 2 salmon fillets, skin-on
  • salt
  • black pepper
  • ¼ cup thinly sliced oil-packed sun-dried tomatoes, plus 2 tbsp oil from the jar
  • ½ medium yellow onion, diced
  • 1 tsp dried oregano
  • 1 tsp crushed red pepper
  • 2 tbsp tomato paste
  • 1 cup clam juice
  • ½ cup heavy cream
  • Fresh basil leaves, for serving

Instructions

  1. Pat the salmon dry, season with salt and pepper, and sear it skin-side down in a tablespoon of sun-dried tomato oil over medium-high heat.
  2. Let the salmon cook 70% of the way through, then let it rest skin side up.
  3. Add the diced onions and let them cook with a little salt and more sun-dried tomato oil.
  4. Add oregano, crushed red pepper, and tomato paste.
  5. Crank up the heat and pour in clam juice, letting it reduce by half.
  6. Cut the heat and add sun-dried tomatoes and heavy cream, reducing a bit more.
  7. Bring the salmon back to finish cooking.
