Spicy Orange Chicken

Ingredients
- 2 Chicken thighs, chopped
- 1 tbsp Oil
- 1 tbsp Cornstarch
- 1/2 tsp Garlic powder
- 1/2 tsp Cayenne pepper
- 1/4 tsp Baking powder
- To taste: Salt and pepper
- Oil: Enough for shallow frying (approx. 1/4 to 1/2 inch)
- 3 Oranges, juiced
- 1/2 cup Sugar
- 2 tbsp White vinegar
- 2 tbsp Soy sauce
- 1 tbsp Sambal oelek
- 3 cloves Garlic, grated
- 1 inch Ginger, grated
- 4–5 Dried Arbol chilies
- 1 tbsp Cornstarch for slurry
Instructions
- Juice the oranges into a bowl and add sugar, white vinegar, soy sauce, sambal, grated garlic, and grated ginger; mix well.
- Season the chicken thighs with salt, black pepper, cayenne, garlic powder, baking powder, a bit of oil, and cornstarch.
- Heat oil for shallow frying until bubbling.
- Cook one side of the chicken until fully cooked, then flip.
- Drain the chicken on a wire rack.
- Toast the dried Arbol chilies in the pan, then pour in the sauce mixture and let it simmer for a few minutes.
- Add the cornstarch slurry to the sauce and cook until it thickens enough to draw a line through it.
- Return the chicken to the sauce and mix well.
