Ingredients

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 ears corn, shucked, sliced into ribs
  • 1 tablespoon olive oil
  • 3 tablespoons mayonnaise
  • 4 slices bacon, cooked crisp, cut and chopped
  • 1/4 cup chopped slivered almonds
  • 1 green onion, sliced
  • Grated Parmesan

Instructions

  1. Stir together salt, chili powder, smoked paprika, ground pepper, cumin, garlic powder, onion powder, and cayenne, then set aside.
  2. Slice and quarter the corn cobs until you have little ribs.
  3. Drizzle the corn ribs with olive oil and season with about two thirds of your spice mixture, ensuring it gets into all the nooks and crannies.
  4. Lay the corn ribs out on a baking sheet.
  5. Broil the corn ribs on low for about 5 to 10 minutes.
  6. Then broil on high for about 5 to 7 minutes or until the kernels start turning brown.
  7. Using the remaining spice mixture, add a little mayonnaise and mix together.
  8. Brush the mayonnaise mixture right on top of the corn ribs.
  9. Top with chopped slivered almonds, crumbled bacon, grated Parmesan, and sliced green onions.
