  • 8 chiles ancho
  • 4 chiles de arbol
  • 1/2 white onion
  • 6 garlic cloves, sliced
  • 1/2 cup peanuts
  • 1 1/2 cups honey
  • salt
  • sesame seeds

Instructions

  1. In a skillet set to high heat, add 3 cups of avocado oil.

  3. Fry 4 chiles de arbol for about 10 seconds.
  4. Fry 1/2 white onion for about 2 minutes or until golden.
  5. Add 6 sliced garlic cloves and fry for about 2 minutes.
  6. Add 1/2 cup peanuts and fry for about 3 minutes.

  8. Use the pulse method to blend until well incorporated.
  9. Add 1 1/2 cups of honey and some salt, and mix everything until well incorporated.
  10. Apply about half of the salsa macha to the ham, getting it in between the slices.
  11. Add some sesame seeds, cover with foil, and bake at 275 degrees for 10 minutes per pound.
  12. After 1 hour and 20 minutes, baste the ham and add more salsa macha.
  13. Increase the heat to 425 degrees and cook uncovered for about 20 minutes.
